I've recently discovered the beautiful romance that is fresh tomato and egg.

Scrambled eggs (sometimes with chopped chicken bacon deli sausage thingy, and maybe a little milk . ALWAYS fried in butter)
or
Fried eggs (yolk and white mixed together and then fried to a crisp in butter (oil usually), sometimes topped with freshly chopped tomato)
or
Omelette (with 2 eggs or more if I'm hungry & they're available or I just make more omelettes using the 2 egg formula,
added ingredients depends on my level of laziness and their availability : usually grate half an onion, grate two garlic cloves , chop up an old wrinkly pimento pepper I might find in the fridge door, black pepper . and depending on whether or not my system is full of mucus at the time, I grate some cheddar cheese in , sometimes I put the whole frying pan in the toaster oven and get a cute, bubbly omelette other than that I try flipping which is never perfect.
Topped with chopped tomato.

If you cook it in a pan without spilling cheese everywhere the cleanup is trivial, it's not as if tortilla leaves markings on a pan. Just rinse it off (or don't) and put it away.

Having pan fried prawns, I mix the spices up but tonight it's lemon pepper seasoning with onion powder and parsley.

Anything pan fried is nice and easy and doesn't take long to make like prawns, fish, sausages, eggs, popcorn. Crackers with cold meat and cheese is a favourite of mine as well.

I shred some gold potatoes and wring out the moisture with a towel. Toss them in a pan with some lard, salt, and pepper to make hashed browns while I scramble some eggs and fry up some of the fresh pork sausage my buddy makes.

It's quick, greasy, and beautiful any day any time. Don't be afraid of grease, it ain't gonna make you fat or kill your heart. Not all on its own anyway...

I want a good meal, but I don't want to cook long:
tostadas with mashed beans on top, cheese, shredded purple cabbage, purple onion, tomatoes, avocado, salsa, lime juice occasionally.

Preheat oven to 375, heat beans, mash, top with cheese, as tostadas cook, cut veggies. 20 minutes tops, decently healthy and delicious. I make about 1.5lbs of beans a week, so I always have them on hand.

I just throw together a tofu pad Thai sans noodles. I know, vegetarian ass bullshit, but its easier to slice up a block of tofu and press it than it is to butcher, marinate, and fully cook some chicken. Just garlic, ginger, any vegetables in the fridge that are about to go bad, 20 dif kinds of hot sauce because using only sriracha is for weak trash, way more paprika than anyone else could tolerate, and maybe some day-old rice. All in a tiny pan because I can't be bothered to pull out the wok.

Sometimes I make blackened tofu instead. Toss it in turmeric and arrowroot powder and pan-fry it until its burnt darker than the crevices of my soul. Eat with hot sauce. Lament the powdery mess in the kitchen.
