I've recently applied for an apprentice pastry chef position and it's looking likely I'll get it. I'm going in for a few trial days so the business and I can suss eachother out before deciding anything serious. I'm young and this will be my first real job. What things should I know/be aware of as not to look like an idiot?

I've just finished the first week of my own apprenticeship.

I'd say relax, don't rush yourself when working. It's something I'm still working on, but yeah, be patient and keep calm while working. Do the job right.

Don't waste ingredients through sloppy prep work. Learn to enjoy long cleanups at the end of your shifts.

Everything is pretty obvious, to be honest. Listen to your orders, relax, don't freak out when you inevitably fuck up. Show your team that you're a hard worker and intent on really learning the trade and you'll do fine, man.
