The vinegar is necessary. Sub another kind of vinegar if needed, but don't make it without it. Well you can, but then douse it in cumin.

Easy as shit, you can leave out the vanilla if you don't have it, or add a sweet liquer of some kind. Just good the variations out there. Also, use cast iron skillets or ceramic baking dishes, not glassware. Or if you do use glassware, play around with the temp, as in lower and slower.

Filipino Chicken Adobo. It's easy, and the ingredients should be cheap no matter where you are. Just google a few recipes, there are variations - find the one that looks easiest to follow for you.

Tacos chorizo. As above see variations, look for it in a nearby grocery, or ideally carniceria. Easy to make as bacon and eggs.

Read up on huevos rancheros similarly.

Roti: White whole wheat flour, 1 cup. Lukewarm water, 1/2 cup. Mix into a sticky ball, roll into a rope, tear off ping pong/golfball sized portions, use a rolling pin to flatten them to nickel thickness, cook over heat. See various youtube videos.

Crepes. Again as above youtube variations, very easy to make with a bit of practice.

And get a fucking slow cooker for beans and slow cooked meats.

Dhal/Dal/etc. Indian delicious lentil soup. Need to find the spices and track down red split lentils but easy and delicious, and it cooks in about 10 minutes potentially. Again, google it.

If you can find a place that sells bulk sesame seed, and you have a food processor, you've got easy access to making hummus and baba ghanouj. I advise about.com middle eastern food section to start off.

OP, all you need is The Joy of Cooking. With that book, especially an early edition, you will be able to cook anything. It's more than just excellent recipes. It has simple instructions on technique that were extremely helpful for me when I was first on my own, like you are. I am now a passable cook thanks to studying this book, along with an old used copy of a CIA textbook.
You can walk into any thrift or used bookstore and find a copy of the Joy of Cooking. Do yourself a favor and get yourself one.
