I know someone will sperg out over this, but I love rustic food. The pastry lattice, iron dish, and the hearty-looking brown and stew-like substance between it all really stoke a fire in my loins. It's the escargot pie at Comme Ça in Las Vegas.

They reduce the escargot down with red wine and veal stock, add in the king trumpet mushrooms and carrots, then put it in the dish with the pastry. They make a sauce by roasting an entire lobe of foie gras with herbs and aromatics, blending it and reducing it down with Madeira sherry, and turning it into a cream sauce. I
