Went fishing once but forgot to bring kitchen utensils, explored a number of ways to cook fish and seafood during that trip.

Used a flat piece of stone as a flap top, depending on the fish, the skin and scales would stick to the hot stone surface, leaving you with a nice fillet.

Tried steaming it on a bed of seaweed, that worked out nicely too.

If you want to go for the cave man feel, scale and gut the fish and stick a stick from the mouth and roast it like that.

You know those campfire bread toasters that are like a basket with a long handle? They make them fish size. Alternatively, wrap in foil, place on coals.

Just be aware that it takes time to get coals to cook on, so bringing one of those cheap tailgate grills might not be a bad idea.

Make a cut from the "chin" to the anus, along the bottom side of the fish. Cut just enough to get through he skin. Reach in there and yank out all the guts.

There's plenty of videos on youtube of how to clean fish, you might check those out.
