I've usually got some sausages, would fry those up. If my one guy wants pasketgi, that's easy enough too.

Heat a pot with olive oil, add in chopped sliced sausage (sweet or spicy, usually spicy) and brown the outside very well in it. Turn down the heat, add in some minced garlic. Let that sit and smell good while using a food processor on plum tomatoes. Those go in ASAP before the garlic burns. Stir, lid on, simmer until I think the sausage is cooked all the way through.

That's about it. Might be watery, have some tomato paste to stir in. Any wine you like, crushed red pepper, basil, oregano, whatever. It's all to taste which I know is lame to do, actual recipes are way better.
Also the pasta should be ziti or other short tubes, not the angel hair spaghetti long noodles.

Hell if you really knew the fellas, you could use a very course grind with a good fatty steak and cook it somewhere around medium-rare to medium. Top it with a little fresh mozzarella, tomato, rosemary, and toasted anchovies. They'd go bonkers for it.

now i use sauteed onions, 8 ounces of grated colby jack, couple spoonfuls of whipped cream cheese, rotell w/ green peppers, 8 ounces of ground sausage, salt/pepper/cumin/garlic powder, shot of lime juice

Sausages, veal, and meatballs slow cooked in a tomato sauce (secret ingredient: beef stock) for like six hours. Serve with bread or maybe on top of pene pasta, red wine, espresso with sambuca for dessert.

The recipe from Godfather 1. There's this scene where all the boys come in and out of the base while "cleaning" the organisation with lots of hits being done all day long. One of them has kitchen duty and he tells the godfather's sonny how he does it, just in case sonny has to do it himself in an emergency. Simple recipe and I made it plenty of times, it's very tasty:
1) Fry some garlic in LOTS of olive oil on low heat
2) Add tomatos sugar, wine and stock
3) Add leftover meats like meatballs and sausage
