I like grilled onions but plain on a patty they're pretty bland. They work well with cheese, mushrooms, bacon, and the like. The bun should be toasted and a decent quality, too.

So I use either 80/20 ground chuck or ground sirloin to make my burgers, and I usually grill them on medium / medium high heat.

They always turn out medium which is good, but they are so fucking juicy that they instantly disintegrate any bun that I put them on. I also find that they aren't really "flavorful" like restaurant burgers despite loading them with salt / pepper / cheese etc.

I just can't get the meat to taste as good, what am I missing?

And how do I make them less juicy without pressing on them and turning them into shoe leather??
