Water, 1 cup/250ml per serving
Milk, 1 cup/250ml per serving
Dried shrimp shells, 2 handfuls per serving
Butter, 2tbsp per serving
Flour, 2tbsp per serving
Potato, 100g per serving
Onion, 100g per serving
Shrimp, at room temp, 100g per serving
Parsley and/or dill, chopped, as desired.
Salt and pepper, to taste

Combine milk and water and bring to just under the boil; meanwhile, place shrimp shells into a container (I use a press pot; you cannot use a press pot that has, however, ever been used for coffee, so be warned).
Pour the hot milk-mixture over the shrimp shells and leave it to infuse until the liquid is coldish, about 1-2 hours.
Place butter and flour into a large sauce pan and set to medium-low/low heat.
Stir continuously until butter is melted and nutty odour of flour dissipates.
Add potatoes and strain milk-mixture into the pan through a sieve.
Stir to dissolve flour paste and up the heat to high.
Bring to the boil, then lower the heat to maintain a bare simmer, add onion and cook until just as thick as desired.
Off the heat and stir in shrimp. Keep stirring until shrimp is heated completely through.
Add herbs, if using.
Season to taste.
Serve.
