Hey /ck/. Got the day off today so I'm gonna make a huge pot of chili. I saw someone on another site mentioning brewing a pot of weak coffee and adding that into the chili. Last time I used a cappuccino stout and it was great but I'm unsure about using straight coffee. Hopefully someone with more experience will chime in as I do this thread.

I put all sorts of fucked up shit into chili; beer, cocoa powder, cinnamon, coffee, etc

using brewed coffee is fine, you won't taste it directly just like you don't taste beer

Alright I'm cooking the peppers, onions, and garlic in a mixture of beef grease, dark brown sugar, and some chunked country bacon that turns everything it touches into gold. Starting to smell great.

Alright. I threw the garlic and water in the food processor then dumped it into the caramelizing veggies. I am mixing the beans, corn, tomatoes, ground chili peppers, spices, cheese, and water with the ground beef right now. I have habanero juice on my upper lip and in my nose and it hurts.

just use straight beer for the liquid. coffee is fine, but that's more of a seasoning than part of the main liquid volume. bullion cubes are better than nothing if you don't have enough beer.

basically you Need beans, preferably Kidney, meat is optional (chili con carne) a tomato base, spices and vegetables is also optional. I like mine on white rice.

Actually, the notion that you don't put beans in chili is not as widespread in Texas as some would have you believe. If you ask the oldtimers in rural areas, nearly every one of them will be rather surprised that some people think that it shouldn't have beans. I don't know any of the older ranchers around me who don't want beans in their chili.

I think that the notion mainly came from chili cookoffs, but then very few people would ever make cookoff chili for their regular dining. Cookoff chili is little more than a spicy gruel.
