The bun has to be brioche. Anything else is nonsense.
Bacon mixed into the patty.
Tiny amount of mayo on the bottom bun to make sure it's not too dry.

Onion...could be caramelised, could be fresh.

Hmmm, I don't know that there really is a "perfect" burger. Because burgers are wildly variable and people like certain burgers at certain times. I've never known someone who only craves one single type of hamburger all the time, their whole life. The closest to that type of person I've ever known was a girl I lived in the dorms with at college, who would only eat fast food burgers and she would only eat "plain" burgers. When she'd order, she'd say "meat cheese and bun, that's it" no condiments, no veg, nothing. It was vile.
Anyway, sometimes I crave a steakhouse type burger, sometimes crave a diner/burgerstand type burger, sometimes I go crazy and make shmancy gourmet burgers, etc. It just depends on my mood.

>> No.5618434

no, it's higher-tier fast food with a cult following. that's why it costs more/has so many staff/was notably clean.

as a canadian I find that the higher-tier American-imported fast food joints (e.g. Chipotle, Five Guys) are cleaner and better run when they're exported to do the company better. Chipotle in America is more expensive but also dirtier in general

The Freestyle is a neat concept, the problem is that a restaurant will replace their soda fountain with it, meaning one person can get soda at one time, versus 2-4 people at once, leading to long lines while people paw through all the options.

>> No.5618456

>>5618434
Seems about right, it was significantly more expensive though. If I wanted a large
/supersize Big Mac Meal, i guess I'd pay around £7 (i dont really know precisley, I dont go to McDonalds)

Five Guys was a cheeseburger for £8, regular fries for £4, and a drink for £2.50. Between 2 people, we bought 2 cheeseburgers, 1 fries which was actually quite a lot and enough for the two of usy, and 1 drink (because fuck buying 2 refillable drinks) so about £11 per person

it should be small enough that you can eat it without using fork and knife, but big enough that you can dismiss the thought of keeping your hands/face clean and have to eat like a caveman.

It should be firm until the last bite, not drip or having layers slipping out

some good sides with different dips if you need to take a break and a drink
I prefer wedgies and/or mozarella sticks with sour cream and chilli sauce and a hot sweet tea or chocolate milk with icecream

As for the burger itself - anything goes as long its 3-5 ingredients which harmonize with each other, i even had some great veggie burgers.

>>5618467
Bottomless drink for £2.50 seems to be about the standard price in most restaurants that ive seen, and when your splitting it between 2 people, it seems reasonable, especially with the Freestyle machine. £4 for fries was fucking excessive though. It was easily enough for 2 people, so i guess £2 each isnt so bad, and they were pretty good fries.

I guess its a lot to do with the novelty factor at the moment as there are only a few in the UK, but then again, i doubt the price will come down.

Hrm...

Thin patties of 80/20 salted and thrown over a screaming hot grill to cook very quickly to right between medium and medium well.
A pretty thick bun, lightly buttered and toasted on the grill till the edges are blackened.
Briefly rub a mashed garlic clove over the top bun.
Thin layer of mayo on the top bun, followed by a thin layer of coarse ground spicy mustard on the top bun.
Very coarse cracked black pepper on the top bun, and a pinch of salt.
Assembling from the bottom:
Bun, patty, colby cheese slice, patty, colby cheese slice, very thin sliced bacon that's not too crunch, very thinly sliced red onion, thin sliced tomato, red leaf lettuce, avocado, top bun.
Flip upside down, press gently and allow to rest a sec, then flip right side up and then eat with very thick cut steak fries. Actually, fuck fries. Oven roasted garlic potato wedges, made from scratch and not frozen so the inside is meaty and solid instead of fluffy and pillowy, and dipped into a chipolte ketchup.

Pickle spear on the side, and a pretty hoppy beer. Or a root beer, one that's not too sweet though.

Eaten with Lynyrd Skynyrd playing softly in the background while sitting in a lawn chair, about an hour before the first fireflies come out.

Yes, I think that would be the perfect burger.

I have several favorites.
>blue cheese, bacon, mushrooms
>Garlic mayo, lettuce, tomato, bacon
>Cheddar cheese, mustard, lettuce, tomato, onions & pickles, some kind of flavored dressing.
No. 1 is probably my favorite though. Can always add more to it. Aioli is always great on a burger in my opinion.

"salad" adds texture. I don't know what the fuck five guys puts in this "salad" but if it's just lettuce, tomato, maybe pickles, mushrooms and onions there's no reason to complain, the flavors from these are faint in comparison to the beef, they simply add aroma and texture, and it certainly won't kill the taste of the meat. The things that do get in the way and overpower the meat are the condiments you put on, in particular, fucking steak or BBQ sauce

I gotta tell you, I was skeptical at first.but after trying Alton Brown burger recipe Im hooked. mayonnaise with black pepper and perfectly ground/cooked meat is a perfect burger.

i even got a person who DETESTS mayo to take not one, but TWO bites. i didnt even have to try hard to convince her.

i could see adding sliced tomatoes and MAYBE some bacon, but the bacon might overpower the subtle flavor.

Steamed hams.

>> No.5623954

If I'm at a diner or something that's going to serve thin patties like that I'll go a double with american cheese, mustard, onion and pickle. Unless a place serves them a specific way or something instead of the generic ketchup, mustard, onion, pickle, tomato, iceburg lettuce get up. I generally don't care for ketchup or BBQ sauce.
