what does /ck/ think of german food?

I'm a cook at a german restaurant in america. We are mostly popular with older people, who often drive from over an hour away to visit, but we don't get the "young, hip" crowd

half of our dinner orders are schnitzels. we have 11 different kinds. we pound, bread, and fry each to order, and most of them come with a different sauce that we make by scratch for each order. that was the most time-consuming and difficult part of learning my job

>> No.5594522

Fried, starchy, bland. Probably one of the low tier cuisines of the world. Sausages are the only saving grace, but other cuisines do sausage more justice. Not even trolling.

I thought this at first too. I've previously worked at french and "new american" restaurants, and always thought german food was really crude, a bit too teutonic for my tastes. Making it for a living though has changed my opinion. It is quite rich, but when everything is made fresh from scratch it can be quite good too

that's because "young hip people" are generally stupid. Or at the least, not worldly wise. German food is delicious.. Of course, it depends on how god of a German restaurant it is. There's great, good, mediocre and horrible here in the US. (Pro-tip, I've worked in several German restaurants here in the US, and I'm half German, half American.)

Most people here in the US know exactly three German foods: sauerkraut, beer and sausage. There's nothing there that really screams "meal" to them. I think there's totally room to grow outside those narrow expectations.

The only problem I can see is that America typically sees bitter and sour flavors as something wrong instead of just another flavor.

Pic related is in Manchester, NH.

It's bretty good; no frills, homestyle, pastries are decent, and dirt cheap, but it's pretty renowned in the area

A German place finally opened up in my city about a week ago. I've been there twice and I'm leaving in a little while to eat there again tonight. Goddamn I love German food. I live about 45 minutes away from a little German town called New braunfels, but it's just too far of a drive for me.

Yep. If you want the most realistic German food, go to Der Lindenbaum. The owner is a professional chef from Germany, she's lived here for like, 30 years now, and of course she has staff working the kitchen, but her recipes are legit, at least, more so than other places. I grew up there, so I can at least tell you where to avoid. Auslander has good live music, but their german food is a joke. I went to high school with the owner, and he's about as german as my dog (in other words, not at all). There's so many places to avoid, it's hard for me to name them all, lol. But I'll mention some more good stuff. Friedhelm's Bavarian Inn has pretty good food, but it's expensive as fuck, and their schintzels aren't as good as Der Linenbaum's. If you like a german-style chicken fried steak, though, Friedhelm's is good. For breakfast, bakery stuff, and a good burger, I recommend George's Old German Bakery. I love that place. Great breakfasts, and the only place in town that you can get actual brotchen. Their burgers are really good, too. They bake the buns themselves. And if you like meringues or sweet pretzels, that's the place. Their breads are good too, get some to take home. IF YOU LIKE SAUSAGE, go to Opa's. It's going to be on the same road where you come into town from San Antonio, on 16, about 4 blocks from Main St. Go in there, and get their original Beef sausage, their Country style (beef and pork), Bratwurst (best I've had anywhere in the US) and their Jalapeno sausauge. OH GOD, and get their beef tenderloin jerky. You will come buckets. I'm having a fart attack just thinking about it. (I live about 2000 miles away now, and I miss it all so much). The thing to keep in mind about Fredericksburg is that so many people from other states have moved there now (I've seen it called "the Aspen of Texas", even where I live), that you have to be careful not to get sucked into a touristy piece of shit, because there's a lot.

Dunno about restaurants, but the German families I lived in while in Germany couldn't cook for shit. My grandma ended up cooking for them for the most part while we were there... I don't know how they eat what they cook. On the streets though there's been some fun stuff like those grilled wurst things.

Britain also has shit cooking from my experience. Generic european meals are fine and tasty everywhere though.

Then again, I'm from Russia with weird eating habits. Most Russians can't cook well either, though, except for grandmas and pro chefs. Grandma cooking is god tier.

>I'm a cook at a german restaurant in america. We are mostly popular with older people, who often drive from over an hour away to visit, but we don't get the "young, hip" crowd
Miami has a hugely hip crowd at Fritz and Franz, but it's predecessor Mozart Stube had issues, and the best one in Miami closed "Heidi's" after 3 incarnations.
German this or that is only cool in the soccer-watching subset, those football fans, beer hall kind of fans who pour in for Oktoberfest to the various local festivals but seem to dry up after that. North Miami, South Beach, hollywood has good restaurants with either tourists or old people. The cuisine is only popular with expats, tourists and the well traveled who have been all over Europe. There's a little grocery near my house, Mainzer's Deli, which seems to have brisk business when I pop in for lebanese food nearby, and been open for decades, which is a great source of traditional breads to take home, chocolates, licorice, but not much else. Since Aldi's came to town, I have to admit, I can find some of the things I might want there, especially gingerbread and liquor cakes near Christmas.
I dunno man. I have some german great great grandparents, so my parents like the food, but if you aren't a beer snob and well traveled in Miami, you probably think of it like a novelty, a bratwurst thing at festivals. I truly love a jaeger schnitzel, leberknudel soup, and I probably make red cabbage or sauerkraut once a month in my house, and always have rye onhand. I couldn't eat it every day, though. Potatoes, sour food, fried food, sausages? Doesn't seem healthy, and is one step above bland if it weren't for yummy hot mustard.

americanized chinese food is so good though, it might even be the most american food there is. I mean think about it, some chinese people found themselves here and needed to cook food to make a living. they caught on that we like steak and fried chicken and broccoli, didn't like weird shit like dog meat but were open to things like bamboo shoots and water chestnuts. they used the meats we like, mixed veggies we like with some things more traditional in china, seasoned and cooked it like they did back home, and then thrived because it was delicious.

what I'm saying is that general tso's chicken with broccoli and fried rice is about as america as you can get.
