Find high quality sausages, nothing wrong with them. The cheap ones are the ones you want to avoid. They'll usually have more salt, colorings, filler, etc.

I live in northern Louisiana, but I go south to see my family a lot and we go this one place with like a pig logo on the door, and they have like sandwiches with boudin filling and fried "boudin balls". New Orleans has to be the number one place for boudin.
