I live in LA. Creole seasoning is not inauthentic or a shortcut, it's what everyone actually uses.

Right, just like how "taco seasoning" is authentic. I saw a Mexican use it once!

Taco seasoning is just chili powder with cumin. Yes, that is what people in Mexico use

Nobody said you had to buy the seasoning premade. You can make your own creole spice blend.

I think of allrecipes as some kind of internet disease. Someone there figured out how to manipulate SEO so their fucking ugly clickbait website populated by morons and redirect loops shows up in every google search with the world 'recipes' in it, and that's it

OP is being a tool, but I do hate allrecipes

>Jalapenos in "authentic" red beans and rice

lol

Also from LA, everyone uses Tony's or Slap Ya Mama or Nunu's, no one blends that shit themselves because these brands do it perfectly

>>5551641
what are you, stupid? You can easily make your own creole seasoning, which is what most people do. You mix up a big jar of it and then you have it when you need it. Sure, they sell creole seasoning too, but that's for the people who don't know anything about creole cooking. At any rate, you're being a dumb bitch.

Thanks, so glad you rated that recipe and not your own monstrosity.

I fucking hate people.

Evvery fucking housewife wants to make it their own and then tell the world how she added peas.

Unless you're talking about prepackaged stuff. Most of that has weird other shit in it. Seriously, though, how hard is it to spice things? I don't even understand how it's considered a short cut. I see it as a crutch.

The corn flour thickens up the mixture and stretches the meat further. Not a fan of Ortega, but I've experienced this first hand and can attest to it not being complete shit.

I actually like McCormick's taco seasoning.

I'm not saying they're terrible, but that they're definitely not just cumin and chili pepper like another person said, and I still don't understand how it's a shortcut. Most cajun seasoning is more versatile, but I still think it's meh. If they were fermenting shit or doing some other awesome process that I wouldn't want to fuck with a lot at home, that's one thing, but most of the time it's just a blend of spices.
I don't look down on others for using it, I just don't recommend it if people ask.

My Grandmother and Great-Grandmother both had a giant box of recipes that they had found/made themselves, my Grandmother had a lot of recipes that used cake mix.
She always did extra stuff to it though, it wasn't just cake mix.

This pisses me off to no end, but it puts the way my family cooks to shame. All of them are literally just canned food doctored up with butter or salt or some stupid shit.

its a type of seasoning, if i was to write a recipe and include herbs de provence or a bouquet garni would that make it less authentic?

My mother and some of her friends put together a cookbook for some animal rescue shelter to raise funds. I ended up with them and looked through them a few years ago before mailing them back to her. Here's what I remember as one of their recipes:

Homemade Clam Chowder
>4 potatoes
>1 can of Campbell's mushroom soup
>1 can of clams

That's fucking it. Microwave and cut up the potatoes and mix the rest of that shit up and there's your homemade clam chowder. People actually paid money for these recipes. Granted it went to the animal shelter, but still, good lord.

The only exception in my family besides myself is my uncle. Motherfucker makes homemade pizza to die for, and bakes all kind of bread like it's going out of style. It seriously sucks much the rest of my family under-appreciates that kind of effort.
