I've been on keto on and off for a bit. Forgoing carbs like bread and rice and whatever has been a bit annoying but not hard. It's the chocolate and pastries that get me. Are there any low carb stuff I could get to satisfy that need?

There's keto friendly cheesecakes out there, buddy. DuckDuckGo or Startpage it. For me, when I needed a sweet dessert I'd blender frozen raspberries with heavy cream. There's different thoughts on the subject, but I didn't get thrown out by eating 50g of carbs. It's probably user specific though.
Chocolate is fine, chocolate with sugar added is not. Moderate it! Also, good luck.

I have been on Keto a few times and I agree with the second Anon who states it's because of caloric deficit. The only reason I use keto for cutting is because it is easier for me to stay full without eating over my TDEE

But that's kind of the point. Your body is burning fat for calories, so you get to eat a lot of fat, so that you feel full, so that you can eat at a calorie deficiency without feeling hungry.

What I did that was really tasty was make pudding using the sugar free packets that Jell-O sells. Then just put whipped cream on it and it's tasty and satisfying as fuck though sometimes I end up eating more than I should since pudding isn't very filling. Also it's a bitch to make since it always sticks to the bottom of the pot when I'm making it even if I stir the whole time.

You can make a low carb frosting with sugar free torani chocolate syrup (or davincis) and cocoa powder for a thickener, if you thicken it even more you can make truffles

Carb smart ice cream and ice cream bars

chocolate cheesecake with a nut crust

unsalted pork rinds dusted with cinnamon and a little artificial sweetener

make a buttery cauliflower crust and drizzle it with chocolate sauce and whipped cream

Okay I have the same thing going on. Here are my two things that help me deal with it. One is my faux chocolate mousse ( you can freeze this for an ice cream substitue) it is not low in calories and fat.

5 1/4 ounces unsweetened chocolate, coarsely chopped or 1/4 cup of unsweetend cocoa.
14 ounces cold heavy cream
3 large egg whites
1/2 -ounce Stevia
Place chocolate in a large bowl set over hot pot of simmering water or a double boiler if you have on. Stir chocolate until melted. Turn off the heat and let stand.

Beat the cream it forms soft peaks. Set aside and hold at room temperature. With a mixer, whip egg to soft peaks. Gradually add the stevia and continue whipping until firm.

Remove the chocolate from the bowl and using a whisk, fold in the egg whites all at once. When the whites are almost completely incorporated, fold in the whipped cream. Cover the mousse and refrigerate for approximately 1 hour or until set.

I find adding a touch of vanilla makes this wonderful and it gets rid of the cravings.

My other suggestion is almond flour pancakes with agave maple syrup fairly low carb and they are low on the glycemic index.

Carbs make up probably 70-80% of my diet, I eat them every meal and they're the base of most dinners, yet I have a BMI of 19.

Sugar free chocolate pudding

That's it. Figure the ratio of cream to pudding you want, but it's pretty thick. You could probably get creative with heavy cream and cocoa powder if you don't want pudding mix, but when I did keto, it was the lowest carb, biggest chocolate bang for my buck that I tried. I never did buy anything marketed specifically to low-carb diets, though, so maybe there's a processed food in a box that would work, too.

Eat a small amount of chocolate and then do heavy cardio afterwards. Burn the carbs and you won't get kicked out. I do this all the time when I do 5ks and I've been in keto continuously. YMMV of course. Everyone is different.

Carbs get shit on because junk foods (soda, donuts, potato chips, etc.) are carb-laden. The majority of healthy shit has carbs, too. This is partly because the majority of FOOD in general contains carbs. Rice, oats, beans, lentils, fruits, vegetables except for a few leafy greens, nuts, seeds, eggs, milk, cheese, shit, pretty much the only "carb-free" foods are certain leafy greens, oils, fats, meat, and protein powder. Why would you try to eschew carbs when they are everywhere, knowing that weight loss is just calories in vs calories out? And if you're worried about muscle, as long as you get enough protein, the rest of the calories don't really matter for fat loss vs. lean mass loss.

But yea, this is correct. People can pack massive amount of calories in when they eat carbs. A bowl of spaghetti or rice can be 500 cals even without those delicious sauces.
Just go with more lean meats, complex carbs, fiber, and a good amount of "healthy" fat and you'll be good.
