modernist cuisine is a bit to specialized and technical and requires a lot of expensive equipment and is geared more toward professional than home cooks which is why I recommended Modernist Cuisine at Home.

>People are moving toward primitivist cuisine
SOME people are moving toward primitivist cuisine

avant garde/ modernist cuisine is still very prevalent in the industry. Pick up a copy of foodtrends or foodarts once in a while instead of watching food network and working at Applebees and you'd know a little bit about where things are headed

Just saying that the modernist style ain't so modern anymore. I have nothing against sous vide octopus tentacles charred over a wood fire. I am also aware that the trend did not die with el bulli. In fact, I was willing to agree with you until the "applebee's" remark. It was at that point when I realized you were just some sort of internet tough guy with no real experience or skill. Some of us are actually cooking out there, and tasting the things we produce. We taste the plants fresh from the soil, then we cook them, then we fucking char them and taste them again. Eventually, we see that there are a few reasons for little gelatinous spheres and sous vide pork bellies, but these are few. Sorry for offending your worldview. We're all just making the world a tastier place in the end.

I'm guessing you're under the legal drinking age, so you might want to consider the price of drinks (something which is almost never included in the plate price yet almost always purchased). Also, take into account that the average markup for drinks in an average restaurant is around 300%. Drinks can easily push a $300-per-plate meal past $500.

Don't forget about tax and tip.
