Can anyone recommend some good books for a beginner to learn how to cook? Like technical stuff, and not just recipes.

My top 3 suggestions:

Jamie's Food Revolution by Jamie Oliver. Yeah, he's a first-rate fag, but this book is excellent for beginners. It is fully illustrated step-by-step for every recipe, and includes techniques.

Jacques Pepin's complete techniques is classic.

And finally, "The Professional Chef", which is the textbook for the CIA (Cooking school, not spies). Buy an older edition off Amazon or a college textbook store. It's going to be hard to beat this value for money, it's well over 1000 pages and covers everything from food safety to budgeting, techniques, and of course recipes. the current edition is costly but you should be able to snag an earlier one for about $10 or so.

This man is excellent. He gets into the science of cooking, and does it in an entertaining way. Check out his cookbooks or watch his show 'Good Eats' (likely on youtube).
