So I have a beef tongue. What should I make out of it? I'm thinking curry but I'm open to suggestions.

you could try this recipe
NGREDIENTS:
1 beef tongue
1/2 white onion, sliced
5 cloves garlic, crushed
1 bay leaf
salt to taste

3 tablespoons vegetable oil
5 Roma tomatoes
5 serrano peppers
salt to taste
1/2 onion, diced
2 (10 ounce) packages corn tortillas
DIRECTIONS:
1. Place the beef tongue in a slow cooker and cover with water. Add the onion slices, garlic, and bay leaf. Season with salt. Cover and cook on Low overnight or 8 hours. Remove the tongue and shred the meat into strands.
2. Heat the oil in a skillet over medium heat. Cook the tomatoes and peppers in the hot oil until softened on all sides. Remove the tomatoes and peppers in a blender, keeping the oil on the heat; season with salt. Blend briefly until still slightly chunky. Cook the diced onion in the skillet until translucent; stir in the tomato mixture. Cook another 5 to 6 minutes. Build the tacos by placing shredded tongue meat into a tortilla and spooning salsa over the meat.

that sounds legit as fuck. Here's mine:
Cover the tongue with water in a stock pot.
throw in some rough-chopped onion & bell peppers & garlic
bring to a boil, cover & simmer on low for about 3 hours.
remove the tongue to cool. reduce strain & reserve broth
once cool, remove the outer membrane and slice into half-inch slices.
coat with oil & season with S&P chili powder & cumin
Grill the slices on a charcoal pit until crispy on both sides.
cut into cubes and spoon a little of the beef broth along with a little more seasoning to taste.
build your tacos with some pico de gallo, salsa verde & creme fraiche

I made one of these yesterday, please listen to me as I am a professional cook/huge faggot. Yes tacos is the only acceptable answer.

Take the tongue, rinse it off. Place in a large pot and cover with cold water. Add tasty shit (onions, carrot, pepper corns, chilies, cilantro stems, lime juice, salt, go crazy) and bring to a simmer. Cook for an hour per pound of tongue. Remove from heat, and let the tongue cool in this liquid, overnight is best but not needed. Peel off the outer layer, and cut off the nasty shit on the bottom. Cut tounge into cubes. Fry these cubes in hot oil, to put a little crust on them. Serve on white corn tortillas with fixins. The fixins are up to you, but I use a little Monterrey jack cheese, a pico made from white onion, cilantro, fine dice chillies lime and salt, thin slice of avocado, and some green sauce, like a tomatillo salsa. Amazing street style tacos will be yours.
