To my knowledge natilla is similar to Maizena, a starchy powder made from corn. Maizena is good on its own, so I imagine this to be pretty good. You can get clams, shrimp, and fish raw in aguachile or civche and cocteles at any seafood place.

I got used to that kind of sushi (picture) not from Sonora, but from Sinaloa.The thing is, i'm living in Mexico City and sushi is the way you like it, though i don't. I dislike food from Mexico City, i can't even find some ingredients for cooking. Tortillas are different, salsas (sauces) are different, tacos are different, even quesadillas they don't have cheese. The only thing i love, are tacos al pastor, they're fucking delicious.

I do find some ingredients, i mean, i'm still in Mexico. But I will tell you that it's easier for me to take a plane to Sinaloa and eat there (that kind of sushi, for example), that to find it here, it's expensive, tough. It depends, there are tortilla chips that say in the package "for chilaquiles", but i prefer frying corn tortillas, and then i add the sauce.

This is my recipe for sauce (i took it from mom)

Ingredients:
5 medium tomatoes
2 chiles ancho (it could be other dry chile, like guajillo or pasilla)
1 small onion
2-3 gloves of garlic
2-3 tablespoons of olive oil (or other vegetable oil)

First you need to rinse the chile with water, and take out the seeds. After that, you boil the chiles, tomatoes, onion and garlic. Then you blend the ingredients and cook this sauce in a frying pan (adding the oil), you cook this sauce until it tastes good, and finally you add salt (as much as you want).

I like chilaquiles with "queso fresco", but you can add any cheese you like, and also cream.
