This is oddly relevant, as I just boiled a dozen eggs to make egg salad, and was contemplating how to go about making the best egg salad ever. Many of the tips in this thread I already do, and I'm looking for more. As of now, I do this:

>finely minced celery
>finely minced gherkins
>sometimes capers, if I have them, rinsed and minced
>mayo
>a little dijon mustard
>minced parsley
>a tiny bit of minced dill
>a smidge of curry powder

>lemon zest

Served on thick, good, white bread with a thick layer of alfalfa sprouts at least (sliced tomatoes in season).

Also, most people, myself included, fry the egg until the yolk is completely cooked. That was a bad picture, but the idea is fried egg between two pieces of bread, with or without cheese, mayo, and various vegetables. Once you start adding meat it becomes its own thing.

You got your mashed up hard boiled egg with a little mayo (standard Hellmans is my choice)
Add some paprika, a light dash of cayenne pepper and some salt, mix that shit in well

Boiled eggs, peeled and chopped fine

Dash or more of hot sauce (Melinda's or Yucatan Sunshine are awesome)

Either poppyseed dressing or Caesar dressing to taste - fuck mayo and miracle whip both

Finely chopped water chestnuts if you like some crunch, or some extra-extra finely chopped walnuts or other nuts.

Teaspoon of Dijon or honey mustard

Very finely chopped roasted red peppers

A bit of hummus is also a very nice addition

Serve on nice seedy 12-grain bread, preferably while the egg salad is still warm. None of your floppy Wonder-type sponge-breads. Toasting optional.

If you like a bit of green, very thinly sliced peeled cucumbers or romaine lettuce leaves are good.

For extra yum, try making a sandwich and grilling it in a pan in the manner of a grilled cheese. Delicious.

My method is...(for one sandwich)
Hard boil 2 eggs
peel them put them in a bowl
mash them up with the backside of a fork
add some mayo until you get the desired thickness
add about a teaspoon of curry powder
mix it up and add salt or pepper to taste

My favorite egg salad sandwich does have some kind of herb, whether green onion or celery leaves, or served on arugula in the sandwich.

My mom's favorite egg salad features green and black olives, as well as the mayo, eggs, salt, pepper, celery, red onion. It's craveworthy.

My grandmother swore by "Durkee's" which is a slightly mustardy/deviled egg tasting mayo. It was her secret in the guacamole, and my grandfather used it on his vidalia onion sandwiches. Look for it.

I like a curry egg salad. Jamaican curry powder, hot mango chutney, cilantro, and the usual ingredients, eggs, mayo, onion. Works for chicken too.
