I prefer folded quesadillas over the deep fried type.

And i really enjoy cheese quesadillas.

And for cheese i like:
The oaxaca type.
Manchego type.
And asadero type.

I use cheddar and pepper jack.

Put the tortilla in a dry, hot pan, put some cheese on it, wait a few seconds, fold, press, wait a few seconds, flip, press, wait a few seconds, remove, repeat.

Why are quesadillas on the appetizers menu at restaurants? Does anyone actually order one and split it up as an appetizer? Maybe I'm just weird, if I get a quesadilla I eat it as my main course and I've never seen anybody order one and split it up for an appetizer. Also why are they so much more expensive than other shit on the menu.

The only kind of kessadilla I would ever eat is an italian one because they are better.

anyway mexican food is bland. And they always overcook everything.

When I say food - I mean MEAT.
And when I say bland - I mean the meat itself.

I'm not dissing their crazy salsas and menudo is delicious.... but.. when you're talking about a purist thing like a fucking carne asada taco, they always choose the worst cuts of beef, overcook it, and it tastes bland.

So i have to put a bunch of jalapeno, salsa, all kinds of non-bland shit all over the bland ass meat in the bland ass taco.
