What do I do with this shit? It's supposed to be the ultimate food. Complete protein. Perfect amino acid score. Tons of fiber and nutrients. But there are all these kinds to choose from. Hulled hemp. Groats. Kasha. Help a poor co/ck/

Hulled buckwheat is the best, imo. Takes longer to simmer than groats, but doesn't become as mushy, and has a better texture. You can use it like you would rice, keep it simple with soy sauce or sauces. Buckwheat makes an awesome stir fry.

Also pic related, the diet of the longest living people in the world. 86% calories coming from carbohydrate. Carbs are what a human being requires for good health, the idea of "too many carbs" is like "breathing too much oxygen"; technically possible, but so unlikely in any normal context that it doesn't even make sense to say

If that's your simplification, it's simplified to the point where it's not true. I say again, if you don't understand the science, don't enter a discussion about it, you're just putting out a bad message and misleading people. Nobody has ever gotten diabetes from eating buckwheat.

Nutrition isn't a religion; belief ain't got nothin' to do with it. There is absolutely nothing wrong with carbs, studies have shown time and time again. Especially a minor amount like 30g.
