I'm gonna buy a charcoal grill for this summer, got any recommendations? Is Weber the only way to go?

Can anyone shed some light on whether or not the One Touch Gold is worth the extra scrilla over the One Touch Silver?

Old, broken propane grill that I've filled with charcoal for ~20 years.

I'll be smoking a brisket very soon.

Yep. Just close enough of the air intakes to maintain temps where you want and bank your coals as far from the meat as you can.

Add lit charcoal and fresh wood every 2-3 hours as needed.

Yep. See above.

>Can you smoke on a gas grill?
Yep. Easier than charcoal, too.

*Note that closing the air INTAKE is the best way to regulate temps, your food tends to start tasting like creosote if you choke off the EXHAUST.

When smoking you also want thin, 'blue' smoke rather than clouds of thick white smoke. Google around for details.

I use a commercial smoker at work every day. I smoke pork butts, brisket, ribs,wings and anything else you can imagine...including gator.

I use a propane grill at home because I'm not a delusional, hipster ass hat who thinks charcoal is somehow superior. come at me.
