Medium-boiled when I'm making eggs with ramen, so that there's some solid yolk but mostly it's liquid enough that it can seep out and flavor the broth.

If I'm having a breakfast centered around eggs, I go with scrambled. If I'm having a breakfast where eggs are an addition to something else, I'll usually go over-easy or over-medium or scrambled.

I first starting eat eggs boiled for like 15 minutes. Then I progressed to overhard fried eggs and later over-easy eggs.

OP has a point about it being perfect for sandwiches. If you have a runny yolk in your sandwich, then when you bite into it it will break and run everywhere, and then you'll be holding a drippy sticky mess. So for sandwiches I usually just break the yolk while cooking the egg to avoid that problem.
