I made this soup today and good god, it's good soup. I added onions and garlic but it was damn good. For some reason I just love making a good soup. Soup thread?

One thing that people don't realize is that when making a good black bean soup is use some epazote. It's a unique flavor and I wont make alalogs such as, tastes like chicken, give it a try. The way to do it is make a batch without epazote, then make some with and do a side by side taste comparison. Don't forget to smell the epazote in the first place, to "get a sense of it."

Op you made me feel less alone, I recently realised nobody close to me appreciates a good soup and that disheartens me because I've been delivering them a thermos or two whenever I find out any of them are sick.

I like a basic like pumpkin or tomato soup and then switching around the veges and spices I use depending on season (and the kind of sickness they've got like garlic for colds, chicken noodle for flu etc)

Really, pumpkin, tomato and a broth are my go tos. I want to branch out into stuff like pea and ham soup or a creamy one. My family culture only made non-cream soups so I don't really have the taste for it to know where to go with it just yet.

also OP, i make a carrot soup in which i pressure cook the carrots with butter, cumin and coriander seeds, then fry spring onions, chillies, garlic and ginger and add the caramelised carrots before blending with a little yoghurt and stock. finish with fresh coriander leaves, lime and a scoop of tahini yoghurt.

anyway, they took all the leftover stuff - we had potatoes, carrots, a little onion... and a huge tub of velvetta cream cheese.

Made some fucking killer broccoli soup the other day. It went something like: head of broccoli, onion (or was it half an onion, hmm), 2 cloves of garlic, a few potatoes. Maybe 5 small ones. Salt, pepper, some water, and a couple tablespoons of butter. Breddy gud

I've got three killer soups that I'll whip up when I want to impress. New england fish chowder, caldo verde, and a creamy brussels sprouts puree. They all get the stick blender to some degree. It really makes a difference.
