I add 1/2 a chopped onion to the butter, before the flour and roux process. No color, just sweat it. Then wen the flour is cooked, milk, or a combo of half and half and milk. To this the cheese and noodles. I combine half the cheese with the bechamel, and then fold in the second amount. A bit of salt, pepper, and cayenne will kick up the cheese flavor. Speaking of flavor, you need to add two or more cheeses. One needs to be honest to goodness melty real aged cheddar. The other cheese can be anything you want.

If I'm baking it, I'll top with fresh breadcrumbs (from the food processor), cheese, and dot with butter. Cover 15-30 minutes til bubbling, then uncover another 10 til browned and crunchy on top.

Definitely use good cheese. I top with Parmesan and panko mixed with melted butter and bake until crisp.

It's like the shittiest mac and cheese you can buy.

If you're looking for store bought macaroni and cheese, the kind you actually want is Kraft's "deluxe" line, which comes with the sauce already made in a foil pouch that you cut open and apply over the cooked pasta. It's pretty nice.
