Why is Bison hard to find? A few places around here used to stock it, now nothing. Is there a limited demand? Did prices go up a lot?

They aren't domesticated. It's harder to raise them because of that. Also I see it in stores here. Usualy ground, But I've seen steaks at wholefoods.
Portland maine by the way. Not even a large city.

My closest grocery store doesn't carry it other than in ground form. Butchers carry it all the time.

I have not had to buy bison in years. I work at a pretty well known museum (with an equally well known restaurant) as a banquet server and the chef actually owns the bison farm for the restaurant. It is brought in fresh everyday, and at the end of each shift I take a few steaks home. It is so gloriously tasty and makes up most of my red meat intake.
