I am not of /ck/, but I have visited a few times.

I'm thinking of removing cheese from my diet for health reasons. I believe hummus would be a good substitute in most situations. (Pleb-tier cook; most of what I eat are microwave nachos comprised of chips, cheese, beans, and spinach, or burritos comprised of the same. Pretty much any meal I make though, while low in complexity, involves spinach somehow.)

That's all, really. Any advice or experiences you guys have?

If you're going to make it in a blender, put it in in small batches. If you try to do it all at once you'll have a lumpy half-blended mess. Use dried chickpeas because they're cheap, and because canned ones taste gross (at least to me).

Also, I usually add more garlic than the recipe calls for, though this applies to everything, not just hummus.
