Yes they did. Both shows do it the same way: The chefs are given a list of three or four potential ingredients for planning, but they dont know WHICH they'll get until the in-studio reveal. It's just to keep either or both from massively melting down on air and turning an hour-long show into 15 minutes of pain.

It "appeals" to the broader American audience, or at least what the producers think appeals to them. The first and second seasons were great in my opinion, but after that you could tell the show started to take on very...TV show characteristics. Starting course in 20 minutes to create drama and tension, increased dialogue from the chefs and cooks, increased display of heavily edited iron chef fuck-ups, to make viewers unsure of who was going to win, chefs talking out and discussing their meals before hand, and increased chairman shenanigans and character-exaggeration. Most people are too fucking dumb to sit through a half hour of executive chefs cooking in a slightly-less-than-reasonable amount of time, and need stimulation.
