I love Gouda but if it were the only cheese I could ever have again, I'm afraid I'd end up hating it. It's a distinctive rich-tasting cheese.

So I'd pick a nice regular mozzarella because it's a good base cheese that works with a lot of things and I'd never get sick of it.
