Mammals have a closed circulatory system dingus. Blood doesn't just free-roam around the muscle tissue. The red you see is pigmentation of the muscle itself. When you let it rest and light red liquid comes it, it's from cell-walls bursting and releasing water and pigment. Blood would coagulant into a gelatinous mess under exposure to the air, salt, or even gentle heat. With a steak or burger, at most you end up with a little grey puddle made from lost proteins coagulating together, not blood.

FRESH meat is still bright red, it just doesn't take long to discolor. By no means is the red purge from meat saltpeter, but rather the meat itself not oxidizing thanks to saltpeter or other chemicals/gases.
