I'm from Finland and Karelian Hotpot is traditional stew here and the recipe only has the meat, water/stock, carrots and onion. If someone made meat stew like that but added cream and chorizo to the stew, it just wouldn't be Karelian Hotpot anymore no matter what he would say.

Yea actual fajitas or fajita meat are skirt steak, but you can order chicken, pork, shrimp, and vegetarian fajitas which are pretty much the same concept, meat and veggies sauteed and served sizzling on a griddle w tortillas. Some of the best "fajitas" I've had were actually vegetarian from a place down the road. They use a godly marinated portabello mushroom instead of meat, so satisfying was the meaty tasty mushroom that meat was not missed.

Queso is indeed chili con queso. Or "cheese dip".

Chili doesn't have beans in it but I've had some pretty tasty beans in chili sauce with meat a few times. My mom makes a very tasty pot of beans in chili sauce with meat, I'll eat it up.
