Processed food has been around since the 50's, and Americans completely embraced it without question for a very long time. You could still buy unadulterated natural ingredients, while processed food was a convenience that people were excited to incorporate into their lives. But changes to agricultural regulations/practices and the introduction of more advanced food science like GMO crops in the 1990s have caused an explosion in processed food, to the point where unnatural factory processing infiltrates every single aspect of every single food in America today. Even once-innocuous foods like vegetables are subject to heavy processing and tampering. This has caused a warranted backlash against that, with Americans generally trying to put more scrutiny on the foods that the megacorporations are trying to feed them.

There's also more appreciation for food now. Being a "foodie" used to be nonexistent just a decade or so ago, restaurants didn't have to be all that creative to make money. People outside of the food industry just didn't care that much about food until Food Network started getting really popular by incorporating reality TV into its programming. Before that it was only those shows they now put on in the daytime where boring dowdy old women talk into the camera for the benefit of boring dowdy old housewives.

Not true. Batali's Molto Mario and Emeril's Emeril Live were both reasonably serious shows about cooking serious food at home, and they were in the early days of the Food Network.

There have always been Americans into food and fine dining. They just tended to be affluent people who lived in major cities, and tended to travel often. So when they went out they were looking for French food like they had in France, or Italian that reminded them of their last trip to Italy. Often they cared as much about the wine list as they did the kitchen. They were your rich aunt and uncle, not you.

Today interest in good food is a bit more democratized. As a result we're seeing more street food influence and poor man's cuts of meat in fine dining, because the audience is broader than it used to be.

But don't kid yourself, we still have horrors today. People still eat overcooked pasta at the Olive Garden (or Macaroni Grill, if they have an expense account). Taco Bell still does fine, as does Chipotle. How much of the population is eating dry, tasteless chicken breasts because they think that's what "healthy" means? American beer nrewing is now leading the world, yet many still think an overhopped IPA = quality. And idiots still line up for Shake Shack like it's the second coming. And come the holidays how many sad green bean casseroles made with cream of mushroom soup will be assembled, even by people who otherwise know better?

Well, now that just not true at all. I grew up in a small town of only 8000, and my middle class family was very into fine dining and food. We watched all the cooking shows on PBS (this was back before Food Network or any of the cooking channels), and we drove to the nearest cities (80 miles one way in either direction) every weekend to go out to dinner in exotic and fine restaurants. My parent taught us from very young ages to appreciate good food, and when dining at home, they would give us little appertif glasses of low alcohol wines to teach us how appreciate them. My mom had the reputation of being one of the best cooks in town, and drilled into us the importance of learning to cook well. I never had green bean casserole until I was in college and ate a holiday dinner at a friend's house. Never even really knew that boxed mac and cheese even existed until I had a roommate who lived on it.
I know that's not necessarily typical, but I'm sure other middle class kids from small towns in flyover land had my same experience, I can't possibly be the only one who's family understood about food.

Personally, I think it's more of a stereotypical norm for people to grow up hating their mother's cooking than it is growing up a foodie. The only main exception to that cultural perception that I can think of are the recipes handed down through generations from foreign born ancestors. "This is your grandma's recipe. Isn't it great?"

I think meatloaf is an excellent example, incidentally. Good meatloaf is wonderfully delicious and is extremely easy to make. However it has a reputation for being dry, tough, flavorless and generally gross. I think that reputation was earned by a few generations of Americans being raised on recipes like the ones in this thread. We simply didn't have a cultural love of food like can be found elsewhere.

Fortunately for us, culture is something that can sometimes change quite swiftly, and foodie is a word that's working it's way into usage. Say what you will about Rachael Ray, but she taught a lot of housewives how to make tasty meatloaf.
