need recipes for a mexican street food restaurant

looking for steak tacos, refried beans, menudo, beef soup, shrimp cocktail, steak, mexican rice, red salsa, green salsa, chicken fillet, and chicken soup. tried some shit on allrecipes and googled a few and it doesn't taste the same like mexican street food. also how long do these things keep?

I find my method of slicing multiple vertical lines, then cutting perpendicular to it works pretty well and fast. For something like tomatoes, I think this works best because you can keep your blade sharp. I imagine a dicing machine might crush a tomato a bit.

Make sure you have some vegan options or you will lose business. Vegans love Mexican food places but the second they find out you use lard in your beans they will never go to your food cart again. Instead, onions and vegetable oil. Wouldn't use animal products in your rice either. It can be just as tasty without.
