Hey /ck/! I saw this recipe linked earlier, and knowing my boyfriend, I'm deciding to cook it up for Valentine's Day lunch! (I'm making lasagna for dinner, so I've already got that all planned out).

It's a shrimp sandwich served with chipotle avocado mayonnaise. Now here's the issue - I like to make things from scratch if I have the time and the option to do so. So, my question follows

>Do any of you have input on the best method for making homemade mayonnaise?
>What is the best method for making sourdough bread? I'd like to make it myself to be used for the sandwiches, and I want it to be very sour. Do I refrigerate it longer?
