That only works if you fill it at least half full of oil and then heat it up until it starts smoking. Then throw a big bowl of ice in to cool it down quickly.

You need to season it right OP, heat up a lot of oil and fry some potato skins, let it cool and jut wipe it out with a paper towel. Repeat 4-5 times. Then you have a nice seasoning in the stainless pores of the iron that doubles as a nonstick coat.

OP nothing need to be done to a ss pan. Just heat the pan before cooking until sprinkled in water drops do that quicksilver thing, then pour in a tbsp of high temp cooking fat or oil, bring it to smoke point, keep it there for a minute or three, pour out excess oil and you pan will be almost non-stick.
