I got a 3 pound pork butt. Was gonna season and roast. However I would like to hear your thoughts. I am a bit unsure of how long to cook it. thanks

Low and slow. You'll need at least 6 hours at 225F covered (I'm assuming you don't have a smoker if you're asking) if it's a portion and 10+ if it's the whole shoulder picnic. You can go traditional bbq, mustard, or fennel and black pepper for the easy options. Cook it until a big chunk falls off when pulled gently with a fork, make a gravy out of the drippings and serve with shit like roasted potatoes, dijon-maple carrots, braised cabbage, and/or rice and beans, then make pulled pork with the leftover meat.

3 pound? That's small.

If it was huge, since I'm Cuban, marinade it in a shit ton of garlic, salt, sour oranges (or lime and orange), cumin, and oregano. Next day air dry the skin. Sprinkle salt blast in a 400 degree oven for like 30min then drop it to like 275-300 for a few hours. Until the skin is really crispy and the meat is easy pulled out.

In your baby case, just season with lots of salt and garlic with lime. If you have a cast iron pot or le cruset pot, you can put it in there covered and roast for a few hours too. Skin will come out nice.

Last time I made a pork roast (boston butt), I stabbed holes all over it, shoved it full of crushed cloves of garlic, rubbed the outside with salt, pepper, crushed red pepper and olive oil and roasted it on a rack (fat side up) for like 5 hours at 325 degrees.

Came out fucking awesome. Ate it for a few days and still have half of it in the freezer for whenever I feel in the mood to reheat it.
