I like a Sonoran style hot dog. That's toasted buns, bacon wrapped and grilled. Home made salsa, pinto beans, mayo and cheese for toppings. Since the grill is already going, I usually also grill up some avocado halves, sprayed with canola. The crunchy/creamyness play in those things go really well with it.

For me, what makes a good hot dog is its casing ("skin"). It needs to crisp up and give with a snap. Your best bet is a label that calls it a sausage, rather than a hot dog. But if you want to be strict about the hot dog label, Hebrew National and Nathans-brand have a good casing. What I do is first microwave the hot dog for a few seconds - Just long-enough to firm the interior. Then, I place it in a large flat skillet and pass a low butane torch over it, from end to end. Doing this will cause the skin to contract on one side, and the hot dog will actually roll itself over across the skillet while you torch it. You'll know the casing is crisping nicely by the way pockets of air will puff up all over, as it fries. Because the interior is already hot from the microwave, you can have a hot dog cooked to your desired level of doneness in under a minute. The quality can range from the element-heated rollers you see at gas stations and commissaries, to the cremated, blackened and ruptured casings that you might prefer to eat at barbecues.

I can't think of a single fast-food place that has good hot-dogs and those instant buns from shops look nasty, so I spent a whole day baking buns, searching for good quality weiners (suprisingly I've managed to find one that are 93% meat) and making hot-dogs.
