I don't understand why the idea of canned tomatoes is what gets you guys. In my house (mother and stepdad both half-Italian) we always used a can each of diced and paste, ideally with as little additives as possible. Regular sauce is made by boiling fresh tomatoes for as long as possible to get essentially the same product and with a fresh tomato price (not like the tomatoes you get in the produce aisle are necessarily super fresh) so using canned really just skips a long and expensive process. But using canned sauce instead of diced, paste, or pureed tomatoes is insulting.

There's a case and point to most percentages of beef. I never said she should be using high % meat to fat ratios; I merely mused that 87% is kinda fatty for a traditional sirloin yield.

I'll be the first to tell you that many of us from Italy (if not most) use tinned or cartoned tomatoes in cooking our various thick tomato sauces. Fresh tomatoes are good when in season for certain sauces, but tinned, cartoned or even dried ones are used for others. For example, I wouldn't dream of using fresh tomato for cooking any sort of ragù (long-stewed sauce) just as I wouldn't use tinned for cooking pasta with sea urchin (fresh or reconstituted-from-dry, only).
"Canned tomato sauce" is not something we use, no, but whole or crushed tomatoes from the tin or carton are very, very common.
