That being said, I tend to go one of two routes with my grilled cheese: either the traditional shitty white bread with processed american cheese for the trashy classic, or I go all-out with a mix of 2-3 soft-rind French cheeses, braised short rib meat, and a sauce made from shallot & wine reduction cooked in Danish or Irish butter and dark German rye bread. Either the trashy version, or pull-out-all-the-stops mouthgasmic.
