I have. It was a terrible experience. Everyone was angry and embittered all the time. The manager was crazy and flipped out all the time and bitched out anyone and anything. He'd get red faced like 6 times a day. I worked there 1 week and decided I didn't need to work around complete moron nor be verbally assaulted everyday or listen to other people be verbally assaulted every day.

I sought out other places, but instead of just going and getting an application or turning in a resume, I instead just talked to the people working at those places. I soon learned that sort of shitty behavior was very common place. So, I said, fuck it, and never worked in a kitchen again.

Does anyone here know what a McAlister's is, and/or has been to one? Because there's one on my school campus and I work there, it really opened my eyes as to restaurants and the like. The food is basically prepared exactly like fast food... but people pay sit-down restaurant prices for it... it sickens me. It's literally prepared the same way I prepared food while working for Taco Bell.

I work in a commercial kitchen
I do 40 hour work weeks. 50-55 in our busy season
Sundays & mondays off
Home by 11 during the week & 1am on fridays & saturdays
Mostly white people except the 3 mexican dishwashers who are actually the hardest working guys in the kitchen
We start everyday by having dinner together created from leftover prep
We finish every night with a couple of beers
Most of us play poker once a week
We take trips to the farm & to food & wine fests
Last month some of us went to dinner at an event for the governor
A couple weeks ago the chef iinvitd us & our loved ones out to dinner as a thank you gesture
After about a year I'll be able to get a job in any kitchen due to the training they provide & the connections my chef & sous chef have. Our last pastry chef now works for Tom Colicchio, another works for Thomas Keller & another for Michael White
Yes the pay sucks but I absolutely love the work I do, the people I work for & especially the people I work with
It is a level of comraderie I have never known
There's a ton of shitty jobs in this industry but there are definitely some good ones out there

Because I am close enough that eavesdropping on the kitchen is pretty much all I have to do all day, and I sure have learned a lot about how restaurants work just by osmosis.

It seems interesting, but not the sort of thing I would want to do for life. Making food for large numbers of people is a totally different animal from cooking for myself, and I imagine that cooking in an upscale fancy restaurant is even more different from dinner chef-ing.

But my homemade steaks have been coming out better, so that is nice.

It depends on what you want to get out of it. Being a cook is great when you're 17-20, since you make slightly more than you would in retail. You rarely have to wake up early, and if you're lucky you get to work with your bros. You get free food, a true feeling of camaraderie, and kitchens can generally be pretty fun.

When you start to want a little more out of your life, like a career, stability, insurance, being a line cook is fucking terrible.
