Check this. I always get the same bacon-wrapped shrimp at this mexican place but finally decided to try their pechuga special. What came out I could never have imagined.

An almost perfect sphere of chicken breast, breaded, deep fried, and then smothered in cheese sauce. You cut into it and inside the sphere there is an interior of bacon, spinach, more veggies and cheeses.

Thing was a goddamn heart attack, but it was so well executed I am really impressed with their kitchen.

Occasionally, something gets foreign-branded and its good. Neapolitan iced coffee, for example, is thought in Naples to be an American invention when Americans have no idea how to make iced coffee like this (and iced coffee in America is generally abysmal, anyway).
The US has a long list of foods it thinks are foreign but are actually of American origin, some going as far as creating elaborate, ridiculous mythologies of their foreign origins (alfredo sauce, for example: completely unknown to us in Italy and the legend goes that it was invented in Rome and yada yada yada).
Singapore noodles is one such dish and fajitas another.

Frankly I don't know of any, but then again I haven't looked for them either. I learned the basics of how to hold your hands by watching various cooking programs on youtube (Ramsay, Bourdain, etc) and got better with practice. Bourdain recommends "La Technique" by Jacques Pepin as a guide for knifework, but that's a book rather than a video. Perhaps I'm over-simplifying things and there's details that I'm ignorant of, but its actually pretty simple. The key is how you hold your grip the knife and how your off-hand holds the food you are chopping. Beyond that it's just a matter of practice.

For holding the knife, pinch the blade itself between your thumb and forefinger, then curl your fingers around the handle. Pic related.

For holding the food on the cutting board, turn your holding hand at 90 degrees to the knife blade, then curl your fingertips under. Use the middle segments of your fingers to guide the blade as you chop. This way if you slip you can't cut your fingers.

One thing I've learned from my cooking is that it really helps to have a sharp knife. If you have to force the blade by pressing hard on it then it's counterproductive since it's more difficult to hold the food, you have to worry about it slipping away from you, food jumps off the cutting board, etc. A sharp knife is much easier, safer, and faster to use than a dull one.

It was supposedly (e.g. sold as) "Mexican Food" but it certainly wasn't anything like proper Mexican or even Tex-Mex (which isn't very Mexican either). It was well prepared in the sense that it was cooked well, but it certainly wasn't anything you'd find in Mexico.

I agree with you about the long list of "Foreign" (but not really) American foods, I'm simply saying that America isn't alone in that regard. Another example is Hamburgers in England, which may claim to be like American hamburgers but are really more like meat loaf patties since they contain breadcrumbs, eggs, etc, which is practically unheard of in America. Likewise British Indian food has little to do with genuine Indian cooking. Chicken Tikka Masla is purportedly the most popular "Indian" food in Britain but it's not Indian at all, it was invented in Britain, the same way that "Alfredo" in USA isn't Italian.

Can you take some constructive criticism? The food is so good looking, but the basic plating is sort of a mess. I mean, if you got those potatoes and mushroom/leeks off the edge of the plate and left a ~1.5-2 inch border, and maybe shingled the chicken into a crescent shape, you could serve that in a restaurant and charge 30+, probably more for it. I had soem prawns in breadcrums. I was spossed to have calarmari rings in breadcrums too but they broke up and began to spit so I tossed the breadcrumbs in with egg and flour and milk and water but it didn'tcome together and fell apart still so I gave up and added the mix to a fish stock I was making with the heads of the prawns except it all went thick and gooey. Just got back from a seafood restaurant (local chain, still pretty good pricewise and qualitywise)

For appetizers the three of us split Coconut prawns and crab-stuffed mushrooms

For my meal I had a fried seafood combo platter with scallops, clam strips, shrimp and cod (with fries and a salad). The shrimp was the best of it all - nice and plumb with a nice thin batter coat and the cocktail sauce was nice and horseradishy.

I was gonna get dessert, but I was pretty full after it all, so I decided not stuff myself and feel like crap for the rest of the night.

My mother & stepfather both got some kind of 'wood fired halibut' dinner. Three entrees, two appetizers, and beverages for three people ended up being 65 dollars plus tip.

I had chinese rangoons I bought because I live in a house with 4 other people and thus anything I buy that would later be used for meals gets eaten within a day. Hmmm, well it's morning here now, but last for dinner I had a plate of meat, cheese, veggies and fruit with crackers. Dry salami, liverwurst, Point Reyes Bay Blue (harder and more minerally than regular Point Reyes blue), Blue Shropshire, sliced turnip, olives, a few snap peas, black grapes, sliced tomato, two kinds of crackers. Sounds like a lot, but it was just small bits of each.
