Never really made anything with bananas except banana pancakes and banana bread...fruit salad. Banana on toast with peanut butter. Banana sandwiches. Maybe some bastardized banana split at some point.

I saw some miniature bananas at the store the other day and I had an awesome idea for a banana pie. I've deep fried plantain bananas, but I think you mean the kind that's usually eaten as a fruit.

Banana custard is probably pretty good. I guess you could also make ... I forgot what I had in mind. Banana jam/compote/syrup is probably possible, but would probably be somewhat sickening. There was banana on pizza the other day, banana and chicken can probably pair if you eat meat. Banana and pineapple go well together, maybe a banana and pineapple upside-down cake. Banana muffins. You can dry them, use them in cereal. Banana oatmeal is pretty good. I think I've seen grilled bananas at some point. If you coat a slice with sugar and caramelize the sugar with a torch, it could make an interesting component for desserts.

If you use them a bit green, I could see them in some Asian soups. Maybe part of a Thai curry. Banana sushi. Here's a banana hot-dog. I've had bananas in my Bachelor Chow (essentially rice and lentils). I guess you could also stirfry them, when they're greenish they're not as soft and a bit bitter, while not being overly sweet and keeping the interesting flavor and aroma.

There are probably more things you can do with them, but like I said, it's not an ingredient I really explored, and it's something I seldom have lying around.

Bananas make an awesome, healthy ice cream when you freeze them and puree them in a food processor. I usually buy a bunch of bananas just to freeze and keep around for this purpose. No need to even add anything to the bananas, just freeze and puree. Just make sure to at least cut the bananas down or your food processor will be damaged.

Bananas Rouge et Coule

Ingredients required:
4 Bananas
5 tablespoon Butter
1/2 cup Bread Crumbs
3 eggs, beaten
2 tablespoons Extra Virgin Olive Oil
1 Cup Grated Cheese
1 Red Onion, sliced

In a large bowl, combine bread crumbs, butter and grated cheese into a thick powder.

In a large skillet, heat olive oil until skillet is thoroughly coated. Proceed to dip bananas into eggs, coat in powder and lay out in skillet in a single layer.
Cook until bananas are visibly melted, about 6 minutes.

Serve over raw red onion.

Feeds 2 to 3 people.

Banana Pudding

PUDDING
7 slightly underripe large bananas
1½ cups sugar
8 large egg yolks
6 tablespoons cornstarch
6 cups half-and-half
½ teaspoon salt
3 tablespoons unsalted butter
1 tablespoon vanilla extract
3 tablespoons lemon juice
1 (12-ounce) box vanilla wafers

WHIPPED TOPPING
1 cup heavy cream, chilled
1 tablespoon sugar
½ teaspoon vanilla extract

1. ROAST BANANAS: Adjust oven rack to upper-middle position and heat oven to 325 degrees. Place 3 unpeeled bananas on baking sheet and bake until skins are completely black, about 20 minutes. Let cool 5 minutes.
2. MAKE PUDDING: Meanwhile, whisk ½ cup sugar, egg yolks, and cornstarch in medium bowl until smooth. Bring half-and-half, remaining sugar, and salt to simmer over medium heat in large saucepan. Whisk ½ cup simmering half-and-half mixture into egg yolk mixture. Slowly whisk tempered yolk mixture into saucepan. Cook, whisking constantly, until mixture is thick and large bubbles appear at surface, about 2 minutes. Remove from heat and stir in butter and vanilla.
3. PROCESS PUDDING: Transfer pudding to food processor. Add warm peeled roasted bananas and 2 tablespoons lemon juice and process until smooth. Scrape into large bowl and place plastic wrap directly on surface of pudding. Refrigerate until slightly cool, about 45 minutes.
4. ASSEMBLE AND CHILL: Cut remaining bananas into ¼-inch slices and toss in bowl with remaining lemon juice. Spoon one-quarter of pudding into 3-quart trifle dish and top with layer of wafers, layer of sliced bananas, and another layer of wafers. Repeat twice, ending with pudding. Place plastic wrap directly on surface of pudding and refrigerate until wafers have softened, at least 8 hours or up to 2 days.
5. TOP AND SERVE: With electric mixer on medium speed, beat cream, sugar, and vanilla until stiff peaks form, about 2 minutes. (Whipped cream can be refrigerated for 4 hours.) Top banana pudding with whipped cream. Serve.

Bananas Foster?

1/4 cup butter
1 cup brown sugar
1/2 teaspoon cinnamon
1/4 cup banana liqueur
4 bananas, cut in half lengthwise, then halved
1/4 cup dark rum
4 scoops vanilla ice cream

Combine the butter/sugar/cinnamon in a skillet. Place the pan over low heat and cook, stirring, until the sugar dissolves.
Add the banana liqueur, then place the bananas in the pan. When it starts to brown, add the rum. Continue to cook the sauce until the rum is hot, then ignite.
After the flames die down, serve bananas over ice cream.

Whatevers-in-the-pantry Foster:

Combine in pan over medium heat:
butter
lemon lime jelly
palm sugar
vanilla extract

then proceed with the banana foster routine mentioned for cooking the banana. Used kentucky bourbon rather than rum. Pretty fucking delicious. Be careful to not overheat the jelly or it will become hard candy.
