Hi /ck/,

Do you have a resource or handy guide for a newbie to grilling steaks/meats?
I'm not sure if I'm just too pleb or if it's just the way my family makes 'em, but all of the steaks my parents make during gatherings/special occasions are pretty much spicy, smokey leather with a hint of lemon.

I would like to learn how to grill the different kinds of meats like chicken, beef and fish, their ideal texture and doneness, etc.

Your help is much appreciated.

Not a guide per se that I've seen. What are you trying to make? Also what kind of grill? Propane/charcoal/grill pan on stove/broiler?

Well, I have a grill pan and someone was nice give me a small coal grill for my birthday a few weeks back. I don't know how to use it though.

I'm just trying to learn the basics for now. Meat + salt and pepper, then when I have that down, I'll start experimenting.

I recommend a chimney starter. Look it up.
Also get some decent tongs. They don't have to be expensive, just sturdy and comfortable.

I prefer not to grill steaks, I use the ambient heat method (high sear, bake at 500 degrees). I do ofter grill chicken. I recommend using good quality charcoal like kingsford or the like. If you can afford real wood coals better on you.

Place desired amount of coals into chimney starter (you don't need much, like, 15-20 briquets). Ignite them using 2-3 rolled up pieces of newspaper. ALLOW THE COALS TO COMPLETELY IGNITE AND GRAY OVER! thats important to ensure proper heat. Then cover up grill and let pre-heat (10-15 mins.) Oil grate with a light coating of olive oil or PAM or whatever. Now we begin grilling.

Also, I should note that its better to let chilled meats come up to room temperature before grilling. You don't want the outside to burn and the inside to be icy. I let steaks sit out with salt/pepper on the for about an hour before grilling.

Chicken = 4-5 minutes per side over direct heat
Steaks you can gauge by feel. A good steak should give but feel a little tight. If you really want to cook well, get a thermometer. No joke.

I'll try your feel method. My friend taught me something along the lines of pressing your thumb with the other 4 fingers of your hand, with each finger being a different type of doneness.

Any advice for cooking large portions?
Like say, you had family coming over and you have to cook 10 steaks or something on the grill.
