Cholula is good, OP. I also like Sriracha.

Hotter hot sauces take away from the flavors of the rest of the meal, so that you can only focus on the flavors of the hot sauce. Cholula and Sriracha actually improve the flavor of meals, so it doesn't taste like you're just drinking hot sauce.

The problem with the first is you either have to be careful to use it, or you're trying to cover up some shitty food with heat.

The problem with the second is that they exist purely because most home cooks are really bad at salting and acid balancing their food, so they're trying to do three things at once to your dish. However, once you know that proper salting and acid balancing is necessary, you realize you might as well add proper amounts of salt and acid yourself. And then some cayenne too if you want spice.

UK brownfag here and I just use homemade mix which is simply lemon, chillies and ginger soaked in lemon juice. The shop stuff usually contains a lot of vinegar, although I did try a hot sauce made by Heera which is great on chips. Comes in a large litre bottle.
