Looking for the ultimate, homemade fry sauce.

I have homemade mayo and mustard, and commercial ketchup catsup.

Haven't found a good ketchup catsup recipe yet.

Also, thanks to Arctic Circle for fry sauce.

Fry sauce is nothing but a 2:1 ration of mayo to ketchup. I usually add a teaspoon of pickle juice and a few shakes of hot sauce to it, maybe a pinch of onion powder, but you don't need to doctor it at all. It's supposed to be simple.

In Belgium it's called cocktailsaus. We make it with ketchup and mayonnaise. Most of the time we add cayenne pepper. On special occasions we add whisky or cognac.

likewise pickle juice(or blended up kosher dills) with mayo and horseradish.

Likewise soy/ginger/scallion , infuse the shoyu with the veggies and thing out with some sweet rice vinegar.

2:1 mayo to ketchup ratio

Add a dash of garlic powder

Add a tablespoon of pickle juice (I prefer more mild pickles)

Teaspoon of mustard

Grind as much black pepper as you prefer (I use about a tsp)

I've made this dozens of times, I love it. Really you can just go nuts and start mixing and trying different things. I'm sure some people like it differently, such as more spicy. I live with a girl who hates spicy things, so I just leave it out because it tastes good as it is.

One sauce the US is lacking is sauce andalouse, I really miss not being able to get it from any place that serves fries. It's easy to make though and is delicious.

1 cup mayonnaise
2 tablespoons tomato paste
2 tablespoons finely chopped onion
1 tablespoon finely chopped green bell pepper
1 tablespoon finely chopped red bell pepper
1 tablespoon fresh lemon juice
1/4 teaspoon salt

Mix all and let chill. You can also substitute the peppers for pimentos, throw a clove of garlic in, or add a teaspoon of worcestshire for tasty variations. I also personally like to add a tablespoon of parmesian for the cheese. Please try it!
