H-hi /ck/. You probably get this a lot, but I've been attempting to go vegan for about two weeks now. Are there any quick, good recipes that you could share? Also, how can I cook tofu without it tasting like shit? I live in a small town, so the local vegetable store and WalMart are pretty much my only options for food, so it's not like I can buy fresh tofu, which I hear is pretty good.

You can start with stir fries. Onion, leek, green beans, brocolli, carrot, etc. Toss some oil and soy sauce in there. Whatever veggies you like. If you're still lazy about cooking you can get those frozen veggies at the supermarket and do it with those.

Rice is easy. Sautee some onions, garlic, salt and whatever else you like in a pan. Toss rice in there and let rice toast for a bit. Add water, bring to a boil. Once it starts boiling cover and reduce to low hit and let it simmer until all the water is abosrbed.

Ratio is 2 cups of water or vegetable stock (2 cups of liquid) per cup of rice. Make sure to use wet and dry cups accordingly.

Beans also easy, especially if you have a pressure cooker.

You can make burritos and such for an easy meal. Eventually you'll get the hang of it and make some delicious food that's more creative and complicated.

For tofu to taste good you have to marinate it. Soy sauce, oil, vinegar, wine, etc. are marinating options.

Alternately you can let the water drain, make a rub with spices, and cook it. You can treat it like you treat meat. You can also bread it.

As far as tofu goes, you really have to buy it from people who eat it. That is: Asians.

All the tofu I bought and tried from North-American supermarket chains was utter shit. I can eat the tofu I get from the Asian store raw, unpressed, unfrozen -- without further processing.

easy tofu tip:

freeze it and let it thaw again.
cut in chunks and deep fry them till golden.
add to saucy dish so they can absorb the flavour.

freezing them changes the texture, give it a try.

simple recipe for daily sustenance:

>brown 2 large onions
>add a cup or 2 of white wine (or water)
>add a boullion cube
>add some ginger, coriander, garlic, whatever
>add 2 large scoops of peanut butter
>let it thicken
>serve with pasta of choice

When I cook, I usually do rice or bread or pasta. Most of the time I just eat fresh fruits though. People overcomplicate things when they try to "go vegan"

I swam about 2 km per day, about 5 days per week, for a few months, making good progress, on a caloric deficit, eating almost exclusively Bachelor Chow v.0.6b.

I'm very confident in it.

Pretty much everything, but specifically grains are great. I don't eat beans myself, but barley, bread, pasta, rice, and even potatoes are good protein sources
