People forget plants don't usually want to be eaten. Garlic and onions developed their pungeancy as a way to keep predators from eating it, and it worked very well until humans started harvesting and cooking them. Thanks to the spice trade, garlic spread throughout the world and was considered a poor man's spice because of how cheap it was

Cooking them lowers the potency, but it's still there to some degree. You can FEEL it when you eat these things

Allacin is not found in garlic that's been let sit, which would include the several month old garlic you get in grocers that actually get shipped here from China.

If there's a reason not to eat Italian food before a flight, it's because alcohol laden sauces. That shit doesn't burn off as fast as restaurants tell you, and a pilot with even the slightest bit of alcohol in his system can face felony charges faster than you can spit a red-neck name.
