Grilling pizzas, /ck/. Ever done it? Suggestions/precautions? I've got a gas grill that can go past 700 degrees so hopefully it can handle the task.

yeah that's what I did.

1. The Pizza stone is a shit conductor of heat, use a pizza steel

2. The smells of the bbq interior and general flavours of carbonized steaks previously cooked on that grill infused into the pizza.

All around disappointing.

you will probably burn your hands a lot

you need to cook it a little on one side. once it has a little crust on the bottom, you flip it over to cook the underside, and you put some tomato sauce+cheese on top (see the grill marks on OP's pic)

put some oven sheet on top to bake the dough more evenly

keep in mind that pizza rises a little when it's put in an oven, so make sure to stretch your dough ball very thinly. this way you won't have uncooked flour on your pizza.

Why dont you clean your grill?
When done right, a grilled pizza should taste very similar to one made in a stone pizza oven, maybe a bit smokier.

My boss does it on the grill like that, he puts the dough on a piece of wax paper then lays it dough down on the grill and peels the paper off.
When browned on bottom he removes it, flips it over (on a pan) and dresses the browned side, then returns the pizza to the grill to brown the other side. He says it's good, I've only done it on a metal pan on a grill. Pretty good, looks fast since heat transfers through metal so well.

OP, will you be using a pizza stone and indirect heat or will you be literally grilling on the grill?

If grilling on the grill.. flop the dough out and give it a couple minutes. then flip it and top it and give it a couple minutes more. it goes quick so watch it.
