So I just got a bunch of frozen tilapia. Right now I put like five of them in hot water so they can thaw faster. Now they look exactly like pic related, not filleted or anything. So when I cook them do I cut the head, fins and tail off first? Do I take the bones out first? Or do I just cook the thing whole and serve it. I have no fucking clue what I'm doing right now, so if someone could help me out because I want to make this in like 3 hours.

Don't thaw in hot water.

two

snip off all fins, and just roast it whole. Throw some lemon and butter inside and season. Also score the skin

Using kitchen shears, snip off the side fins.
Using a knife, scrape off the scales.
I assume it's also not cleaned, eh?
Using small scissors (my family had always used surgical scissors for this) snip open the belly.
Using your hands, scoop out the innards and discard.
>alternately, you can heavily salt the innards and ferment them, catching their cast-off liquids; this is Italian fish sauce and it stinks to high heaven, but it's so good
In order to remove the bone, make an incision just behind the gills until you hit bone then remove the knife.
Shimmy the knife along from the tail end, holding the knife in your dominant hand and the tail in the other, along the bone; done correctly, the fillet should come off in one piece.
Repeat for the opposite side.
Tilapia is a rather delicately flavoured (see: nearly flavourless) fish. It does well in just about any application. I prefer to use tilapia fillets in soups/stews (such as miso and fish stew, sakanashiru), but it's also very good fried and served with chips/fries.

because it leaves them in the danger zone for bacteria for a long time.

if you want to filet them, take a thin filet or boning knife, flip it under the gil and slice straight down til bone, then cut horizontally along the fish until about 1/4 inch from the tail, flip the filet over and separate it from the skin

>> No.4439408

my favorite way of cooking them is in garlic
you take a whole bunch of garlics maybe a whole small head or half a large one for each of them
peel
pound in a mortar or something similar with a bunch of salt and a little, I said a little beer, just enough to make it moist
do not blend it
now taste it, It should taste salty but not oversalted
now put them fuckin fish, cleaned and descaled, keep the head and tail, that´s where the deliciousness hides
let them rest for at least 20 minutes in the fridge, better if 1 hour or something like that
now get your frying pan and add enough oil to cover almost half the fish
fry it to your liking, if intense heat you can have it very juicy, if in low heat you can get it really firm

enjoy delicious fish, skin and all, with a couple of drops of lime juice and any sides you like

suck the motherfucker´s eyes out, and eat the cheeks tongue and "brain"

OP, your best bet here is to cut it into 2" strips and fry it. If it's been in your freezer for 4 years, it could taste last monstrous ass, depending on how it was sealed. Coat the dry fillets in flour, then an egg wash, then corn meal. Pan fry or deep fry, doesn't matter.

Completely honest, it is actually ok. It's a bit dry, but I added some leman and it's quite good. Got to say the oatmeal makes it a bit crunchy and adds texture. Someone here said there would be no texture so I improvised when I had no corn meal and decided oatmeal would be good.

I would butcher them (not sure if that is the correct verb for fish). You can save the bones and heads for fish stock but tilapia isnt known for flavor so it might better to just throw them out or use them as fertilizer.
