Not chevre, no, but I've made both egg-based (steam-baked) American-cream-cheese cheesecakes as well as acid-set (no-bake) American-cream-cheese cheesecakes.

Cheese sponge is also good, but not commonly eaten, made, sold or even known where I live currently.
